Where we come from, the Holidays (typically the Christmas holidays) were eagerly anticipated all year long by young and old as a joyous occasion and a (short) break that provided respite from everyday work and worries, symbolized by an explosion of fireworks and the deafening bangs of firecrackers, a wealth of performances in the streets and in the theatres… and of course a chance to fill our bellies to bursting.
During the festive season, the custom was to bring together all those dishes considered most appealing, which families of modest means could not afford during the rest of the year, such as ravioli: a delicious dish heaped with ravioli appeared almost as a mirage to the mouth-watering imagination of most, as did 'cima alla spezzina', 'gallina farcita', 'pandolce genovese', the 'frittelle' enjoyed on Christmas Eve, or other traditional culinary delights.
